  • Prepare the Batter:
  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix together the flour, sugar, and salt.
  • In a separate bowl, whisk the eggs and softened butter until smooth. Add vanilla extract and mix.
  • Slowly combine the dry ingredients with the wet, stirring until a smooth dough forms.
  • Shape and Bake the Wafer:
  • Using a spoon or piping bag, drop small spoonfuls of batter onto the prepared baking sheet, leaving space between each cookie.
  • Bake for 8-10 minutes, or until the wafers turn golden brown and crisp.
  • Remove from the oven and let the cookies cool completely on a wire rack.
  • Make the Filling:
  • For vanilla filling, beat the heavy cream with powdered sugar and vanilla until stiff peaks form.
  • For chocolate filling, prepare chocolate ganache or use chocolate-flavored cream as desired.
  • Assemble the Cookies:
  • Once the wafers are cool, spread a layer of cream filling between two wafers. For a cleaner look, pipe the filling onto the wafer.
  • Chill the filled cookies in the refrigerator for at least 30 minutes to allow the filling to set.
