Equipment

  • Oven
  • Pizza Stone or Baking Sheet
  • Pizza Cutter
  • Rolling Pin (if making homemade dough)

Ingredients

  • 1 lb pizza dough
  • 1 cup dill pickles sliced (or your choice of pickles: bread and butter, spicy pickles)
  • 2 cups mozzarella cheese shredded
  • 2 tbsp olive oil
  • 1/2 cup red onions thinly sliced (for added flavor)
  • Fresh basil chopped
  • Balsamic glaze for drizzling
  • 1/2 cup cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tbsp dill or oregano optional
  • 1 tsp lemon juice or vinegar
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano or basil

Instructions

  • Preheat Oven: Set your oven to 450°F (230°C). If using a pizza stone, place it in the oven while it preheats.
  • Prepare Dough: Roll out the pizza dough on a floured surface until it reaches your desired thickness. Transfer it to a pizza stone or baking sheet.
  • Make Sauce (Optional): Prepare either a white sauce or garlic sauce. For white sauce, combine cream, Parmesan, dill/oregano, and lemon juice. For garlic sauce, heat olive oil, add minced garlic, and simmer for 2-3 minutes.
  • Assemble Pizza: Spread your sauce evenly over the dough. Layer on the sliced pickles, followed by shredded mozzarella cheese.
  • Bake: Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  • Optional Toppings: Add fresh basil, red onions, or drizzle balsamic glaze for extra flavor.
  • Serve: Slice and serve hot, and enjoy the tangy twist of pickle pie pizza!

Notes

Pickle Variety: Dill pickles are traditional, but experimenting with bread and butter or spicy pickles can give a unique flavor to the pizza.
Cheese Options: Mozzarella works great, but cheddar, provolone, or feta can also be used for different flavor profiles.
Moisture Control: Pat dry the pickle slices to prevent the pizza dough from getting soggy. Firm pickles like dill hold up better during baking.
Serving Suggestions: Pair with a crisp lager, lemonade, or a dry white wine. Sides like coleslaw or garlic-roasted veggies complement the pizza perfectly.
