Ingredients
  

  • 1 whole chicken or chicken pieces
  • 2 tablespoons fresh ginger root grated or julienned
  • 3 carrots peeled and sliced
  • 3 celery stalks sliced
  • 1 onion diced
  • 2-3 cloves garlic minced
  • 6 cups chicken broth or homemade
  • 2 cups egg noodles or rice vermicelli
  • Fresh herbs parsley, thyme, cilantro
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions
 

  • Prepare the Chicken: Clean and cut the chicken into pieces. Reserve bones for the broth.
  • Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  • Add Garlic and Ginger: Add minced garlic and grated ginger. Cook for another minute to release their flavors.
  • Simmer Broth: Add chicken broth and chicken bones to the pot. Bring to a boil, then reduce heat and simmer for 30-45 minutes. Skim any foam that forms.
  • Remove Bones: Remove the chicken bones and discard them. Add the chicken meat back to the pot.
  • Add Noodles: Stir in the noodles and cook for 10-15 minutes until the noodles are tender.
  • Add Herbs and Season: Stir in fresh herbs and season with salt and pepper to taste.
  • Serve: Ladle the soup into bowls and enjoy the warm, comforting flavors.

Notes

Noodles: You can use different types of noodles like egg noodles, rice noodles, or whole wheat noodles, depending on your preference.
Storage: Refrigerate leftover soup in an airtight container for up to 3-4 days. For longer storage, freeze portions in freezer-safe containers for up to 3 months.
Customization: For a spicier kick, add cayenne pepper or fresh jalapeño to the broth. You can also add other vegetables like mushrooms, spinach, or zucchini for a unique twist. For a vegan option, substitute chicken with tofu or chickpeas.
Timing of Noodles: To achieve the perfect noodle texture, add them 5-10 minutes before finishing for al dente, or 15-20 minutes for softer noodles.
