Equipment

  • Oven or stovetop (or microwave)
  • Baking sheet (for oven method)
  • Skillet or sauté pan (for stovetop method)
  • Microwave-safe dish (for microwave method)
  • Saucepan (for teriyaki sauce)

Ingredients

  • For the Meatballs:
  • Costco Chicken Meatballs frozen
  • For the Teriyaki Pineapple Sauce:
  • 1 cup pineapple juice
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 2 tbsp cornstarch
  • 2 tbsp cold water for cornstarch slurry

Instructions

  • Prepare the Teriyaki Pineapple Sauce:
  • In a bowl, mix together pineapple juice, water, soy sauce, brown sugar, garlic, and ginger.
  • In a separate small bowl, make a cornstarch slurry by mixing cornstarch with cold water.
  • Heat the sauce mixture in a saucepan over medium heat. Once it starts to simmer, slowly add the cornstarch slurry, stirring constantly.
  • Continue to cook the sauce for about 3-4 minutes, or until it thickens to your desired consistency.
  • Adjust the thickness by adding water if it’s too thick or more cornstarch slurry if it’s too thin.
  • Prepare the Chicken Meatballs:
  • Oven Method: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. Place the frozen meatballs in a single layer and bake for 20-25 minutes, or until the internal temperature reaches 165°F.
  • Stovetop Method: Heat a skillet over medium heat. Add frozen meatballs and cook for 10-12 minutes, turning occasionally until they are heated through and the internal temperature reaches 165°F.
  • Microwave Method: Place the frozen meatballs in a microwave-safe dish and heat on high for 2-3 minutes, stirring halfway through. Ensure the internal temperature reaches 165°F.
  • Serve the Meatballs:
  • Once the meatballs are cooked, drizzle the teriyaki pineapple sauce over them or serve it on the side for dipping.
  • Garnish with green onions and sesame seeds for a finishing touch.

Notes

Always check that the meatballs’ internal temperature reaches 165°F to ensure they are fully cooked.
These meatballs pair well with mashed potatoes, rice, sautéed vegetables, or a simple salad for a complete meal.
For a fun appetizer, serve meatballs on toothpicks with sauce on the side for dipping.
Feel free to adjust the sweetness of the teriyaki sauce by adding more or less brown sugar according to your preference.
