Chicken Meatballs Costco Recipe: Easy Homemade Version

This recipe is a homemade version of Costco's popular chicken meatballs. It’s healthier, more affordable, and allows you to control the flavor and portion size.   • Meat grinder or food processor
  • Baking sheet or rimmed baking pan
  • Parchment paper or silicone baking mat

Ingredients
  

  • 1 lb ground chicken mix of dark and white meat
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup grated parmesan cheese
  • 2 cloves garlic minced
  • ¼ cup onion finely chopped
  • 2 tbsp fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, parmesan, garlic, onion, parsley, salt, and pepper.
  • Gently mix everything together until well combined, being careful not to overwork the mixture.
  • Scoop small portions of the mixture and shape into balls. Place them on a baking sheet lined with parchment paper, leaving some space between each meatball.
  • Bake for 18-20 minutes, until fully cooked and the internal temperature reaches 165°F (74°C). For a golden crust, broil the meatballs for 2-3 minutes.
  • Serve with your favorite sauce or as desired.

Notes

For added flavor, try seasoning with herbs like oregano, basil, or red pepper flakes.
You can freeze the meatballs for up to 3 months. Just freeze in a single layer first, then transfer to an airtight container or freezer bag.
If you prefer a crispy exterior, sear the meatballs in a hot pan with a bit of oil before baking.
These meatballs are versatile and can be served with pasta, in a sandwich, or as an appetizer.
