Ingredients
  

  • For the Salad:
  • 8 ounces pasta such as penne, fusilli, or farfalle
  • 2 cups cherry or grape tomatoes halved
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh basil
  • 1/2 cup shredded Parmesan cheese optional
  • Optional: 1/2 cup diced bell pepper for added color
  • For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup for a vegan option
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • Salt and pepper to taste

Instructions
 

  • Cook the Pasta :
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  • Prepare the Vegetables :
  • In a large mixing bowl, combine the halved tomatoes, diced cucumber, red onion, fresh basil, and optional bell pepper. Toss gently to mix.
  • Make the Dressing :
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, minced garlic, salt, and pepper until smooth.
  • Assemble the Salad :
  • Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the mixture and toss gently to combine.
  • If using, sprinkle the shredded Parmesan cheese over the top and toss again.
  • Chill and Serve :
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve chilled or at room temperature. Garnish with additional fresh basil if desired.

Substitute gluten-free pasta for a gluten-free version.
Use store-bought bruschetta topping as a shortcut for added flavor.
